Portions

The cut list is an estimate of what you will receive with your package. Actual sizes and amounts vary by individual steer.

Steaks (Approx 12 – 15 lbs, steak thickness ~ 1”)

Note that Top Sirloin, Flank, and Skirt steaks are packaged individually; all other steaks are usually 2 per package.

• 2-3 Rib Steaks (1” bone-in)
• 2-3 T-bone Steaks
• 1 Porterhouse Steaks
• 2-3 Sirloin Steaks
• 2-3 Sirloin Tip Steaks
• Round Steaks - Variable

Roasts (Approx 10 - 15 lbs at ~ 3 lbs each)

• Rump, Pike's Peak, or Brisket
  For our 'Sampler' 1/8 package there simply aren’t enough portions of the larger roast cuts, in which case Susan and Pat will do their best to divide 1/8 portions equally by cut and weight.

Other (Approx 5 - 7 lbs)

• Stew Meat (1-2 lbs)
• 1 Liver

Ground Beef (Approx 15 - 20 lbs)
