Processing Options

When it comes time to process in October, the steers go to a local custom meat processing shop. In collaboration with our butcher, we designed the cut list to produce the best selection of cuts for these grass fed steers. If you are buying a half or whole steer, it is possible to 'tweak' your cut list slightly, please call or e-mail us with your request or questions. Animal processing takes approximately two weeks including dry aging time and actual processing of the meat. The total weight of your processed meat will be determined at this time. All meat cuts will be paper wrapped and ground beef will be put in tubes unless you have specified vacuum packed at the time of ordering. Please request in writing any desired variety cuts (organs) no later than October 1st.
