Processing Options

When it comes time to process, the steers will be headed off to Mel’s (a local custom USDA approved butcher shop) in early October. In collaboration with Mel, we designed the cut list to produce the best selection of cuts for these grass fed steers. If you are buying a half or whole steer, it is possible to 'tweak' your cut list slightly, please call or e-mail us with your request or questions. Animal processing takes approximately 12 – 15 days including dry aging time and actual processing of the meat. The total weight of your processed meat will be determined at this time. All meat cuts will be paper wrapped and ground meat will be put in tubes unless you have specified vaccuum sealed at the time of ordering.
